Mayonnaise

Historians still argue over whether mayonnaise is a Spanish or French invention. What is indisputable is that this emulsion of egg yolks, olive oil and vinegar or lemon juice was named after Port Mahon, the capital of Menorca, a Mediterranean island, which throughout history has variously been under the control of France, Britain and finally Spain.
