Pies are easy to eat but not to make, therefore the assumption is that this American expression from the 19th century alludes to pie eating, especially apple pie. In America, pie has long been a symbol niceness and homeliness. Thus, the words ‘as pie’ was added to a variety words, to construct phrases like nice as pie, polite as pie, sweet as pie etc.
